FRENCH TOAST -Jackie Bishop

French Toast or “Pain Perdu” (lost bread) is made usually with stale or wasted (lost) bread as a way of using up old ingredients.

After the excesses of Christmas,something simple like this makes a nice change.

You will need:

About 2 tablespoons of Olive Oil

2 thick slices of day old white bread 2 eggs

1 good splosh of milk

1 level teaspoon of cinnamon

Maple/Golden syrup to serve

Love your food!

Put the olive oil in a large frying pan and heat on a medium to high heat. Break the eggs into a large,shallow bowl ,add the milk and the cinnamon and beat long and hard with a fork. Take one slice of bread and place it into the eggy mix,letting it absorb some of the liquid for a few seconds. Turn it over and do the same to the other side. Pop this into your frying pan and let it cook on one side until it is a golden brown colour then turn it over and repeat. Do the same with the other slice. Cut each slice into 4 triangles,divide between your two plates,drizzle with Maple or Golden syrup and eat whilst still hot. Lovely!!
